Tasting notes
Medium body. Lemon cream, custard, flint. Bright lemon through midpalate, mineral notes highlight the bright finish.
Whole cluster pressed. Fermented in Oak and Stainless steel (25% New French Oak). 40% stainless steel ferment – aged in neutral barrel.
8 months in barrel. Mix of non-inoculated and selected yeast strains.
Production notes
Dry farmed. Dampier Vineyard sits on Underwood Mountain, at about 1000 ft elevation. Volcanic loam soils. Owner Paul uses restorative vineyard practices such as composting, and mulching prunings to maintain biodiversity and organic material in the often dusty ‘ball bearings’ conditions of underwood earth.
